1 can Thai Kitchen Unsweetened Coconut Milk
1 tablespoon maple syrup
After buying the whipped cream, place it upside down in the refrigerator overnight. Open can upright, and scoop out the top half of the solidified coconut milk and place in a food processor or blender. Add three tablespoons of the liquid coconut milk from the can and add maple syrup. Blend until the solid milk is fully whipped, stopping to scrape the sides of blender as necessary. This is perfect so serve with fresh fruit, or as a topping for desserts or hot chocolate!
As simple as this recipe sounds, it took me months to make because there are a few things you need to know when purchasing the coconut milk. The trick is to shake the can when you are in the store and buy ones that sound solid, where you aren’t just shaking a can of water. I have found the brand that works best is Thai Kitchen, and fat free and $1.00 off brands do not work.
