Not long ago, I thought oatmeal could only be eaten after cooked on the stove top or in the microwave.  But oatmeal is just like other packaged cereals that can be eaten right out of the box- without artificial ingredients and added sugars.  This breakfast takes just a few minutes to throw together, is perfect for an on-the go breakfast and really does taste like cinnamon rolls!

3/4 cup steel cut or old fashioned oats

1/3 cup unsweetened coconut flakes

6 pitted dates, sliced thinly

1/2 cup non-dairy milk

2 teaspoons ground flax seeds

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1 teaspoon pure maple syrup (to sweeten, if you are using unsweetened milk)

 

Combine all ingredients and allow to sit for a few minutes before indulging in this whole foods breakfast bowl.
